MasterClass ‘Graševina – The Great White Wine of Croatia’ by Ivan Barbić MW
Graševina Croatica, Slavonia and Croatian Danube’s regional winegrowers’ association, is glad to present ‘Graševina – The Great White Wine of Croatia’ masterclass.
This event is the perfect opportunity to discover and taste the fantastic premium quality varieties of Graševina wines that Croatia has to offer and their incredible terroir. Wine expert Ivan Barbić (MW) will guide you through a selection of Slavonian and Croatian Danube wines, explaining their qualities and characteristics.

Ivan Barbić MW
Ivan Barbić MW was born in Zagreb, Croatia and grew up and completed his education in Switzerland. He has been working for almost twenty-five years in the wine business. First, in wine research at Agroscope in Wädenswil, then as sales manager for oenology products. After that he has worked as wine buyer for Coop, Head of the purchase department for Bataillard, Head of Product Management wine for Denner and now as strategic buyer for Bataillard. His independent activities include consulting for different wine producers in Switzerland, Spain and Croatia, acting as chairman of the Maître Conseil en Vins de France 2006 – 2008, and writing for magazines including Schweizerische Weinzeitung, Vinum and the Croatian food and wine magazine iće&piće. He is also Chairman of the jury for La Sélection in Basel.
Graševina wines
Graševina is Croatia’s the most planted variety where Slavonia and Croatian Danube region is almost a synonym for this variety, where Graševina shows the best results.
Graševina is an amazing variety that can produce superb and versatile wines, and it can give excellent sparkling wines, light and refreshing still wines, mature and more structured wines, then late harvests and selective harvests with noble rot, sweet dessert wines and finally some of the finest archival wines whose lifespan is measured in decades.
Majority of Graševinas are fresh wines characterized by fruity, mineral, and floral aromas. You will often recognize fresh apple, citrus and pear aromas on the nose and the palate. White flowers and grassy flavors are also typical. Sweeter aromas like hints of exotic fruits, cantaloupe, quince and honey are not unusual.
As it’s usually made into lighter bodied refreshing wines, and when it comes to food pairing, it is popular with lighter seafood-based dishes. However, more ample bodied wines allow for more adventurous pairings with dishes like chicken, pork, creamy pastas and risottos and a variety of vegetarian and vegan dishes.

Beautiful and delicate fruity aromas of pineapple, green apple and vineyard peach, as well as the spicy aromas of chamomile and dried flowers make up the characteristic scent of the terroir of the Kutjevo vineyards. The taste is elegant with finely tuned acids and a nice finish, which makes this wine extremely drinkable. The grapes were cold macerated for 18-24 hours. The wine was fermented and aged in stainless steel tanks. 33% of the wine was fermented with natural yeasts and aged on lees – sur lie.

Blend of wine from grapes harvested at different stages of maturity – regular harvest 22.22% and late (auslesse) harvest 77.78%. Five percent of the wine was aged for three months in large oak barrels on the fine lees and 95% of the wine was aged in stainless steel tanks on the fine lees for 6 months. Blended in stainless steel tanks and aged in the bottle for three months.
This wine of a strong yellow color with soft gold reflections is characterized by a distinctive autumn quince aroma and a hint of apple and pear. After some ten minutes in the glass, walnut, honey and roast apple flavors are clearly felt. The mouthfeel is dominated by a soft, rounded-off density and a rich, oily texture with fresh citrus elements on the sides of the palate, while the long and delicious finish features touches of apple, honey and walnut. This is one of Croatia’s most complex Graševina wines, reflecting the rich and specific nature of the Baranja terroir.

The wine comes exclusively from old vineyards, 30 years and older. Part of the work in the vineyard working with horses. The harvest is two weeks later than the regular Graševina. A fresh wine by type, abundant fruit on the nose with some floral overtones, warm on the palate, finely rounded, harmonious, with solid body. Beautiful glowing crystal colour of yellow straw, considerably intense aroma hinting fresh apples and some vineyard peaches, also suggesting some bright field flowers. Taste is vibrant with good acidity finishing with pleasant mild bitterness specific to the wine variety.

Graševina de Gotho is a refined, layered and complex wine of golden-yellow, crystal clear color with aromas of honey, pineapple, flowers, and mango. Full taste, fine maturity and long shelf life, is achieved by later harvest and careful aging in wooden barrels made of Slavonian oak.It is rich on the palate with flavours of pineapple, mango, and honey.
This wine received a Platinum medal in the Decanter World Wine Awards 2020 and is rated a score of 97.

This mono-varietal wine is made of carefully selected grapes picked at the best sites of the unique Principovac appellation. Created with special dedication and vilification method, three months on fine yeast and aged for three years in oak barrels in the ideal condition of the Old wine cellar, erected in 1450. The wine is dry in style, gloriously fruity, complex, harmonious and elegant body structure with intense character of the Graševina variety and the great 2011 vintage.
This wine gained the special honor of Best of Show Croatia in the Mundus Vini Summer Wine Awards 2019.

The amber colour, pronounced viscosity, characteristic notes of honey in the aroma and hints of dried figs will delight your tastebuds. Due to the above characteristics and the extremely long and stable aftertaste, this wine may be declared a jewel of viticulture and winemaking. Best served at a temperature of 8–10 °C with desserts made with chestnuts and other nuts, as well as with ripened cheeses.
This wine received a Grand Gold medal in the Mundus Vini Wine Awards 2022.
